Mango JalapeƱo Pico de Gallo

Created this yesterday for our dinner. We served it with fish and then enjoyed it again this morning with breakfast burritos. It was even better today!

4 Roma Tomatoes diced

½ White onion diced

1-2 Mangoes diced

2 JalapeƱos pepper diced

1 Yellow Chili pepper diced

½ cup Cilantro chopped

2 Limes, juiced

Salt to taste


Mix all ingredients together let sit for a couple of hours at room temperature or in refrigerator.

Enjoy with chips, over grilled fish, chicken, quesadillas, etc…

Kamut Belgian Waffles

Made these waffles last weekend and there were very good!
We LOVE Kamut in this house!
I found the recipe here.


3 Eggs Separated
2 cups kamut flour
2 teaspoons baking powder
1 teaspoon salt
1 1/2 cups milk (I used Almond milk)
3 tablespoons sugar
1/4 cup butter, melted and cooled
1 teaspoon vanilla paste (I used 1 vanilla bean)
1/2 teaspoon almond extract ( optional for waffles with fruit)

In a glass bowl, beat eggs whites until stiff. Stir together Kamut flour, baking powder, and salt in a small bowl. Beat egg yolks and sugar in a separate bowl until light and lemon colored. Gradually add melted butter and vanilla. Stir in milk, alternating with Kamut flour mixture until well combined. Gently fold egg whites into the batter. Bake in a preheated waffle iron. Serve with real maple syrup or fresh fruit and whipped cream.

Omelettes in a Bag

At Girls Camp this year, all the girls put together their own omelettes and I thought it was a great idea! The most common question I get is: "Do the bags melt?" I can tell you from experience that they do not! Here are a couple of versions, the first I found on the internet and the second I received by email about a week after camp (so I don't know the source). We used the second version for camp, the girls enjoyed adding their own ingredients in the bags. For large groups, remember to have each person write their name on the bag prior to adding ingredients. Enjoy!

Version 1:


Omelettes In A Bag

(1 serving)

  • 2 Large Eggs
  • 1 Tablespoon of Cheese
  • 1 Tablespoon or so of any other ingredient you like in your omelette (like bacon or onion) - Optional
  • 1 Small Ziploc Bag
Crack eggs right into the small Ziploc bag. Add the cheese and any option ingredients you like. Seal the bag, squish the ingredients to mix. "Burp" the air out.

Bring a medium-sized pan of water to a heavy boil.

Drop Ziploc baggie into the boiling water. Boil for 5 minunte.

Carefully, remove baggie from the water. Open the bag and roll the omelette onto a plate. YUM !

This was used to feed a group of twentyfive. Everyone had a hot breakfast!

WARNING From Mr Breakfast:
As of August 2006, the ZIPLOC company does NOT recommend using their bags to boil food. ZIPLOC brand Bags are made from polyethylene plastic with a softening point of approximately 195 degrees Fahrenheit. When exposed to boiling water, the plastic could begin to melt.


This Recipe was Tested in the Kitchen of Charlie and Betsy McHugh. When the Omelet is done it slides right out of the bag. No Fuss, No Muss. Please read warning before considering this recipe.

Version 2:


ZIPLOC OMELETTES

This works great !!! Good when you're alone or when all your family is together. Best feature is that no one has to wait for their special omelet !!! Have guests write their name on a quart-size Ziploc freezer bag with permanent marker.

- Crack 2 eggs (large or extra-large) into the quart size Ziploc bag (not more than 2) shake to combine them.

- Put out a variety of ingredients such as: cheeses, ham, onion, green pepper, tomato, hash browns, salsa, etc.

- Each guest adds prepared ingredients of choice to their bag and shake.

- Make sure to get the air out of the bag and zip it up.

- Place the bags into rolling, boiling water for exactly 13 minutes. You can usually cook 6-8 omelets in a large pot. For more, make another pot of boiling water.

- Open the bags and the omelet will roll out easily. Be prepared for everyone to be amazed.

- Nice to serve with fresh fruit and coffee cake; everyone gets involved in the process and a great conversation piece.

Imagine having these ready the night before, and putting the bag in boiling water while you get ready, and in 13 minutes, you have a nice omlette for a quick breakfast!!!
